Argentina's Independence Day is celebrated on 9 July. On that date in 1816, the Congress of Tucumán, meeting in San Miguel de Tucumán, declared the independence of the United Provinces of South America. The house where it met, known as the Casa Histórica, is now a national museum. It is a public holiday, marked with official ceremonies, parades, flags on balconies and warming winter dishes such as locro and empanadas.

How to adapt it
- Do not mix up the two national days: 25 May marks the first local government in 1810, while 9 July marks the declaration of independence in 1816.
- The national anthem has a long instrumental introduction. Warn guests not to start singing too early, and print the words of the sung verses for international guests.
- Display the ceremonial flag, with the Sun of May, in a place of honour near the lectern, and brief your flag bearer on carrying it upright at a steady pace.
- Independence Day falls in the southern winter, so warming dishes such as locro and empanadas are traditional. Mention your menu in the toast card if you serve them.
